How to Make
- Preheat oven to 170°C.
- In a bowl, combine egg yolks and 30g granulated sugar. Beat with a hand mixer (low to medium speed) until light and fluffy.
- Add vegetable oil, then water, mixing well after each addition.
- Sift in hojicha powder and cake flour together. Mix with a rubber spatula or whisk until no dry ingredients remain.
- In a separate bowl, beat egg whites with a hand mixer (high speed). Gradually add 40g granulated sugar in three additions, beating until stiff, glossy peaks form.
- Gently fold the meringue into the egg yolk batter in three additions, using a rubber spatula to scoop from the bottom of the bowl.
- Pour the batter into the mold and gently tap it a few times to remove large air bubbles.
- Bake at 170°C for approximately 30-35 minutes.
- Once baked, immediately invert the cake to cool. Remove from the mold only after it has completely cooled.
Point
- Sifting the roasted green tea powder with the cake flour will help prevent lumps and ensure a uniform texture.
- Whisk the meringue until it's glossy and forms stiff peaks to achieve a fluffy texture.
- When mixing in the meringue, the key is to gently fold it in with a rubber spatula so as not to deflate the air.
- Turning the cake upside down immediately after baking and letting it cool will help prevent it from sinking.
Hojicha cookies +
Ingredients
Ingredients (yields approximately 20-25 cookies)
- Salted butter: 100g (at room temperature)
- Granulated sugar: 60g
- Egg yolk: 1
- Hojicha powder: 8g
- Cake flour: 180g
- Baking powder: 2g
- Vanilla extract: a few drops (optional)
How to Make
- Preheat the oven to 170°C.
- Place the butter in a bowl and cream it with an electric mixer (low to medium speed).
- Add the granulated sugar and mix with the electric mixer until light and fluffy.
- Add the egg yolk and vanilla extract, and mix with the electric mixer until well combined.
- Sift in the hojicha powder, cake flour, and baking powder together, then gently mix with a rubber spatula until no dry ingredients remain.
- Gather the dough into a ball, wrap it in plastic, and chill in the refrigerator for about 30 minutes.
- Roll out the dough to a thickness of about 5mm and cut out shapes with your preferred cookie cutters.
- Arrange on a baking sheet lined with parchment paper and bake at 170°C for about 12-15 minutes.
- Once baked, transfer to a wire rack to cool completely.
Point
- Sifting the hojicha powder with the cake flour will result in a smooth, even finish.
- Bringing the butter to room temperature makes it easier to achieve a smooth dough.
- Chilling the dough in the refrigerator makes it easier to cut out shapes and prevents it from spreading too much when baked.
- If the cookies brown too much, the hojicha flavor will be less pronounced, so it's best to remove them from the oven when the edges are just lightly colored.
- Storing them in an airtight container will keep them crispy for several days.
